Bombs
Ingredients:
•All Purpose Flour or Maize Flour: 1/2 cup •Salt: 1/4
tsp
•Egg: 1, separated
•Oil: 1 tbsp
•Bananas: 4 ( 600 gms)
•Lemon juice: A few drops
•Vegetable oil for frying
•flour for coating
•Icing sugar for dusting
Method:
• Place flour, salt, egg yolk, 4 tbsp water and oil in
a bowl. Mix everything to a smooth paste. Allow mixture to marinate for about
30 minutes.
• Meanwhile, peel bananas, cutting them into 3/4 in / 2
cm sections. Drizzle banana chunks with a little lemon juice.
• Heat vegetable oil in a high saucepan or a wok. Whisk
egg whites to a stiff meringue and fold into the batter.
• Pat banana chunks dry on kitchen towel and toss one
after the other in a little flour and then coat in the mixture.
• Deep-fry banana chunks in sizzling hot oil, allowing
the pieces to float for about 2--3 minutes until they turn golden brown. Drain
on kitchen towel.
• Dust the deep-fried banana bombs with a little icing
sugar and serve whilst they are still warm.
